Ramen Twist by Yatai at Breadbar, LA


We recently made a visit to Breadbar again for their next feature – Ramen by Yatai. Yatai, meaning food stall in Japanese, is from Ironnori Concepts, Chef Kazuo Shimamura.

The standout of the night was the foie gras ramen. In the light broth, you could taste the different complexities of flavor. Soup and broth need not to be thick and overly salty, yet, in my opinion, should have flavors and be light. Yatai accomplishes this feat, with different flavors, not normally found with ramen. Ox tail, a typically hearty meat, has a soup broth that was my particular favorite. Tonight wasn’t about the ramen or the ramen twist, but was more about the flavorful soup broths.

This is the last week for Yatai’s Ramen at Breadbar.

  1. mixed reviews all over. some didn’t like the foie, some didn’t like oxtail… iunno. not sure we’re gonna make it. how the heck did YOU make it. amazing!

  2. I kinda liked the oxtail. I made it out there, when I was last in LA. . .My friends and I have been talking about it. So, we just made our way there.
