Fool’s Noodles 小南門福州傻瓜乾麵, Taipei

Fool’s Noodles is a noodle shop that features simple “dry” (soup-less or non wet noodles). A small chain, Fool’s Noodles apparently does and specializes in one thing – Sha Gua Gan Mian (傻瓜干面, a version of 熱乾麵).

These noodles are prepared simply without sauce and essentially without any flavor. It is up to you to put as much or as little sauce additions. They are served pipping hot in a bowl, with chopped green onions, from the front open kitchen. At your table, there is savory soy sauce, black rice vinegar, and spicy dry hot peppers flakes. Sesame and chili oil is available, as well. I suggest lots of each to bring out the slight subdued flavors from the noodles. I believe the key to the dish is the noodles itself. Though just carbohydrates the combination of the vinegar and pepper, which off sets each other, is a nice blend.

Noodles, a key staple for Northern Chinese, yet, Wuhan, their original 熱乾麵, is where Fool’s Noodles is influenced from. Wuhan is located smack dab in the middle of China. This simple dish can be thought of as the “everyday” man’s dish. The common person, rich or poor, will enjoy it.
