On a recent trip to Harbin, I got to try and sample some of the local cuisine. I went to a restaurant called 正宗杀猪菜 从头吃到尾 (translated as Authentic butcher food – End from the beginning to eat). They specialize in the Pig.

When I saw that, I knew – as the Thirsty Pig, I had to try it. I love pork. This places makes dishes from almost all the parts of the pig. From the pork belly, blood, intestine, shoulder, feet, ears, and even brain. It was fascinating to see all the different dishes made up from the pieces of pig.

Though I am a bit squeamish when comes to eating the weird parts. . . I would be a bit interested to try. This place is basically a butcher that also is a restaurant. Each of these dishes provide great nutrient aspects with each pig part. For example, the intestine and blood are full of iron. The pork belly and shoulder are hearty meals with healthy pig fat.

We had a large shared hot pot of soup containing pig blood, vegetables, and pork belly. We were given a dipping bowl with lots of garlic to dip the pork belly pieces before each bite. We also had a great cauliflower dish – it was a bit spicy and salty – which is a great combination. There was also this large dish of bean sprouts – which was tasty – not too salty. Yet, one thing I should mention, this type of cuisine is called Dong Bei cuisine – meaning North Eastern (Chinese cuisine) – which is usually characterized as salty. Almost every dish we had contained more salt than we were used to. We added water to our soups, ate more rice with each bite, and drank water and beer to offset the savoriness. We also had a great sweet and fried vegetable dish. The light batter was crunchy with each bite.

I think this restaurant would do well, if it wasn’t so salty, in Los Angeles, because it basically doesn’t waste any part of the pig.

Thank god we had native speakers or else we would have been eating pork brain, testicles, and all the other good parts of the pig. The restaurant definitely has generous portions. The picture of the food on the table was when we left the restaurant. It looks as if we didn’t even touch it! Great times…
